Y'all, I'm convinced there are few people in this world who love Mexican food as much as I do... It's kind of a problem! In honor of Cinco de Mayo, a holiday that I very joyfully celebrate each year, I wanted to share 3 of my all-time favorite recipes.
These are all super easy to make, and paired together, you'd have a KILLER meal for Friday night!
This recipe is from my mother-in-law and is always a huge hit! Just throw all ingredients in a good blender (we use a Vitamix) and blend until smooth. Leftovers can be frozen and thawed out for next time. Yum!
- 1 can frozen limeade
- 3/4 can* tequila
- 1/3 can* triple sec
*Use the limeade can to measure out your tequila and triple sec amounts.
CREAMY JALAPENO DIP
If you've ever been to Chuy's Tex-Mex (my favorite place in the world, btw!) you know all about this amazing dip. Seriously, chips don't taste better dipped in anything else! This isn't a perfect match to Chuy's recipe - they must have a secret ingredient we haven't tapped into - but after many trials and errors, a few family members and I have gotten pretty darn close!
- 1 cup mayo
- 1/3 cup sour cream
- 1/3 cup buttermilk
- 4 oz can green chilies
- 4 oz diced jalapeños*
- 1 pkg ranch buttermilk dressing
- 1 clove garlic
- 3 tbsp fresh cilantro, chopped
*I usually add some juice from the jalapeños to give it more of a kick. We like it spicy!
Just like with the frozen margs, you throw everything into your blender and blend until super smooth and creamy. Pour in a bowl and serve with your favorite chips! (Can also be used to spice up pretty much anything - chicken, steak, salads, etc)
BAKED CHICKEN FLAUTAS
I pinned this recipe a few years back (originally from Healthy Delicious) and it immediately became my husband's favorite meal. Super easy to throw together and can easily be doubled in size to feed a big group of people. To make it even easier, use a rotisserie chicken!
